A simle dish to enjoy for breakfast.

Ingredients :
2 Eggs
1/4 cup diced mushrooms
1/4 cup diced bell peppers ( green , yellow and red )
1/4 cup diced tomatoes
1/4 cup diced onions
Green chillies as per choice and taste
Fresh Spinach (optional) , nicely chopped.

Saute the vegetables for 4-5 mins , add salt and black pepper as per taste. Once done, place the vegetables in a microve dish nicely placed on the sides making a well in the centre. Break in 2 eggs and bake it for 5 mins on 180 degree.
You will have a running yolk once the dish is baked. I personally like it this way. If you wish to have it completely cooked , bake it further for 2-3 mins.

The same vegetables can be used to make a yummy omlette if you wish to avoid microwave baking.

Let’s Bake – Fruit Cake

Ingredients :

1-1/2 cup all purpose flour

1 cup sugar

100 gm butter or 1 cup vegetable oil

1 teaspoon baking Powder

1 teaspoon vanilla essence

2 eggs

1/4 cup milk

Mix sugar powder and butter/oil and blend properly 

Add in eggs and essence and mix further.

Seave flour and baking powder seperately  in a dish.

Add it to the mixture prepared and blend it for the last time.

All in dry fruits, tutty frytty, cherries, cashews, raisins , ets (feel free to add any dry fruits , fruits of your choice)

Preheat microwave on convection mode. Bake the cake on 180 degrees for 40 mins.

Choco Mocha Cup Cake

Inspire by the many food blogs that I follow, I decided to bake a cup cake today. The only hitch was that I did not have the mould, so used my bowls to bake  them.

1 cup all purpose flour
3/4 teaspoon baking powder
1/2 cup vegetable oil
1 teaspoon coffee
1 teaspoon choco powder
1/2 cup sugar
1 egg
1/2 tea spoon vanilla essence
5-6 small cherries cut in half

Mix all the ingredients together apart from the cherries. Beat it well to make a smooth paste. Glaze the inner walls of your mould with oil and sprinkly a pinch of flour. Pour in half the misture, place the cherries evenly and then pour the remaining half.
Preheat oven for 10 mins. Once done, bake the cake on 180 degrees for 30 mins
