Every Morning is the same story , i sit and think what to make new for breakfast.. and end up experimenting with eggs. I just love them , in any form of recipe. Today i tried a simple recipe. Toasted a few breads and made a sunny side up omlette. To experiment , I sauted a few veggies and served it with toast and egg. Believe me it was just yummmm!!

Things you need :

Eggs , Cilantro or dhaniya leaves , bell peppers , onions , tomatoes , black pepper & salt to taste.

You can also use spinach , boiled/baked potatoes , mushrooms as side serves.

A quick Breakfast recipe which can be enjoyed with tea or any milk Shake.

A simle dish to enjoy for breakfast.

Ingredients :
2 Eggs
1/4 cup diced mushrooms
1/4 cup diced bell peppers ( green , yellow and red )
1/4 cup diced tomatoes
1/4 cup diced onions
Green chillies as per choice and taste
Fresh Spinach (optional) , nicely chopped.

Saute the vegetables for 4-5 mins , add salt and black pepper as per taste. Once done, place the vegetables in a microve dish nicely placed on the sides making a well in the centre. Break in 2 eggs and bake it for 5 mins on 180 degree.
You will have a running yolk once the dish is baked. I personally like it this way. If you wish to have it completely cooked , bake it further for 2-3 mins.

The same vegetables can be used to make a yummy omlette if you wish to avoid microwave baking.

Mushroom Egg Masala

saute onions till light pink

add in tomatoes, ginger, green chillies

Add salt to taste, red chilly powder curry powder

add mushroom

add boiled eggs cut in small pieces

mix well and let it cook for 2 mins

garnish with coriander and serve hot
